Soyflakes French Toast

"What should I cook for Breakfast?" This is a daunting question I am sure many of us face in the mornings. I am no different. After all how many times can one eat eggs, cornflakes, poha & the upmas in a week! So today morning I was in mood to make something new. My husband wanted to eat something healthy & light. Still in bed, as I kept pondering over what to make , a brainwave hit me. I had cornflakes, milk, egg whites & brown bread so I decided to make Soyflakes french toast..wahh!

Black Bean Soft Taco

Black Bean Soft Taco

I by mistake soaked an entire packet of kidney beans only to realize much later that it was too much. I made the usual rajma sabzi with half of it but I really wanted some ideas on what to do with the remaining. So I decided to ask my friends from a foodie group on Facebook. I was overwhelmed with the responses I got, it opened up so many options & I wanted to try each one out. However I decided to try the falafel recipe. I know that usually its made from chick pea but as suggested by a friend on that group, I alternated chick pea to kidney beans.I took reference from her recipe & tried to create something new of my own. I am naming it Black Bean Soft Taco.

Tomato Kadhi

Tomato Kadhi/Rassa

This is a very interesting twist to our regular rasam. This is made without using tamarind & dal. However it tastes very much like a spicy tangy rasam but its little more thicker in consistency. I tried this for the first time & was not disappointed by the end result.

Mutter Dhingri Masala

Mutter Dhingri Masala

As a family we love mushrooms! I keep looking for different recipes where I can use them.
We were having some friends over for dinner the other day so I decided to make this delicious recipe which I have eaten at restaurants many times. I wanted to give this dish that same flavor & with lot of excitement I started preparing this dish.

Minty Cucumber raita

Sesame flavored grilled tofu & veggies with brown rice

Sesame flavored grilled tofu & veggies with brown rice

My husband loves Tofu while I still prefer the non healthier version called paneer :). As I ransacked my refrigerator to cook up a meal for my hubby, my eyes fell upon this extra firm tofu. I usually make a vegetable with mushrooms, tofu & bell peppers to eat with roti, but this time I was in mood to try out something new. I remembered the new grill pan I had purchased awhile back & thought of making something using these 2. I then checked for some other ingredients that I thought would go well in this dish & finally did manage to cook up a healthy yet tasty meal for my hubby! :)

Semolina Mango Halwa

 Semolina Mango Halwa

A friend of mine is travelling to Alaska on a pleasure trip. I would love to go there sometime soon. Anyways this post is not about Alaska or my travel diaries, its about how I landed up making this halwa.
Actually before leaving she emptied her fridge & gave me a Mango to use. I left it on the kitchen rack to ripe for a few days. Today I thought it was ready to use. I searched for recipes online on what all I could possibly make with 1 mango. I am a sucker for the Indian Alphonso however we don't get the same ones here. So I was very keen to see how this one tastes as I have never tried them before. Anyways coming back to the sweet dish, I finally found a recipe online which suited me as I had all the required ingredients at home. I however tweed the recipe to suit our palate. Here is what I did..

Lima Beans in Spinach gravy

Lima Beans in Spinach gravy

Few days ago, I tried Lima beans for the first time at a party. It was one of the ingredients in the Biryani. This is how I discovered this tasty legume. Google told me that its is also known as Butter Beans because of its starchy yet buttery texture. I decided to give it a try. My friend suggested a desi version to cook them & I decided to give that a twist in my own way! This is what I got.. :)

Soya Mushroom Subzi

Soya Mushroom Subzi

What do you do if have some random veggies in your fridge which have hardly been tried together before in my kitchen? After a seemingly long vacation, when I came back home & opened my fridge..there was not much in there. Grocery shopping was yet to be done so I decided to try to cook a dish with whatever I had at home. I was ready to risk my dinner! What did I have? There was some spinach, mushrooms, celery, onions, tomatoes, broccoli & some soya nuggets. I decided to mix them all :)

Brown Rice Pulao

Brown Rice Pulao

Being South Indians, me & my husband are a sucker for rice. It really is our weakness & specially when you are trying to shed those extra pounds off, eating rice doesn't help. So what do we do? Look for alternatives obviously. Meet Mr. Brown rice who initially I was very skeptical to even try! My husband said, "why not, lets give it a shot" & we landed up buying it from Walmart. It was stocked in my kitchen for more than a month now. I still had not made up my mind to try it. Finally yesterday I just thought - "What the hell, I will make it anyways, If it turns out well, then its our dinner, else my husband will have to finish it off! :)
So I decided to not take any chances & make it with all the spices & veggies to pep it up.
