Soya Mushroom Subzi
What do you do if have some random veggies in your fridge which have hardly been tried together before in my kitchen? After a seemingly long vacation, when I came back home & opened my fridge..there was not much in there. Grocery shopping was yet to be done so I decided to try to cook a dish with whatever I had at home. I was ready to risk my dinner! What did I have? There was some spinach, mushrooms,celery, onions, tomatoes, broccoli & some soya nuggets. I decided to mix them all :)
Since I mentioned all the major ingredients above, I will directly shift to the part f making it.
In a bowl, boil water, add turmeric powder & little salt. Now add the soya nuggets & leave it soaked for few mins. Drain the water from the nuggets.
In a pan, add 1 tbsp olive oil, temper mustard & cumin seeds, add minced garlic, green chillies, onions, celery,tomatoes, mushrooms,spinach, broccoli & soya nuggets. Mix & cook them well. Add turmeric powder, garam masala & coriander-cumin powder & salt to spice this up. Sprinkle chopped cilantro on top for garnish.
I must say, that the dish turned out very good. We had it with roti & our taste buds were satisfied. I realized, one should never shy away from experimenting. Something good always turns out!
