Rajma Palak

Rajma Palak

One of my experiments which turned out to be very tasty. It was a last minute twist I decided to make it this way than going the traditional way. I enjoyed the process & glad it turned out well. I jokingly told my husband that if it does not turn out well, he will have to finish it off, else we will share ;)

What you need:
1 bunch chopped spinach/palak
1 large onion sliced
3-4 green chillies slit across
Bring water to boil & add all of the above & cook for few mins, remove immediately & run under cold water. Blend to a smooth paste.

Canned rajma beans
1 tbsp ginger paste
Pinch of cinnamon powder
salt to taste
In 1 tsp oil, add all of the above, mix well & cook for few mins. Keep aside.

In a pan, add 2 tsp olive oil, add cumin seeds, coriander & cumin powder & ginger garlic paste. Add the spinach mixture & cook till oil separates. Now add the cooked rajma, 1/2 cup milk & mix well. Add salt as required. Sprinkle garam masala & cilantro for garnish. Serve with any Indian bread.
