Karare bhindi


Karare Bhindi

Bhindi which is also known as Ladyfinger is a very healthy vegetable. This is typically eaten with a Indian bread or with dal & rice. It is one of my favorite vegetable. I have learnt this recipe from my mom. Passing it on to you guys. Do try it out this simple recipe & let me know how it turned out!



You need:
500 gms of chopped Bhindi
1 large tomato
1 large onion
2 tbsp of minced ginger & garlic
1 tbsp grounder peanuts
Cilantro for garnih

For marination:
1 cup thick curd
seasonings like turmeric powder, chilli powder, coriander & cumin powder, salt

What you need to do:
In a  large bowl, take chopped bhindi, add thick curd & all the seasonings. Leave it in the fridge for 30 mins.
In a pan, add 2 tbsp of olive oil, & fry this marinated bhindi for few minutes till it gets cooked & is little crisp. Remove from pan.
In another pan, take oil, add garlic, ginger, onion, tomato, salt, peanuts. Let is cook for few minutes. Add the fried bhindi. Mix well. Sprinkle cilantro on top & little peanuts for garnish. Serve hot.
