Sesame flavored Ivy Gourd with Potatoes

The name may sound exotic, however preparing it is simple. I have used Ivy Gourd which is also known as Tendli back in India. This dish can be eaten with Indian breads.



Here is what you need:
300 gms of Ivy Gourd (Tendli), cut them long,
2 potatoes evenly diced
1 large tomato finely chopped
1 tsp finely chopped ginger & garlic each
1 tbsp sesame seeds
1 tsp mustard & cumin seeds each
Seasonings like red chilly powder, cumin powder, turmeric powder
Finely chopped cilantro & a pinch of sesame seeds for garnishing
Salt to taste

Here is how I did it:
In a  non stick pan, take 1 tbsp olive oil, temper the mustard & cumin seeds, add ginger & garlic, add the sesame seeds & let them crackle. Add tomatoes & cook for few minutes, next goes the potatoes, cook till they become soft. Add the Ivy gourd & mix well. Now add all the seasonings one by one. Stir & add salt. Cover the pan for 7-8 mins. Garnish with cilantro & sesame seeds.
Your dish is ready.
