Black Bean Soft Taco

Black Bean Soft Taco

I by mistake soaked an entire packet of kidney beans only to realize much later that it was too much. I made the usual rajma sabzi with half of it but I really wanted some ideas on what to do with the remaining. So I decided to ask my friends from a foodie group on Facebook. I was overwhelmed with the responses I got, it opened up so many options & I wanted to try each one out. However I decided to try the falafel recipe. I know that usually its made from chick pea but as suggested by a friend on that group, I alternated chick pea to kidney beans.I took reference from her recipe & tried to create something new of my own. I am naming it Black Bean Soft Taco.



This picture nearly shows you everything you need, to make this dish. However I have still mentioned the ingredients below.


Ingredients:
200 gms black beans soaked overnight & boiled
4 tbsp ready-made spicy Hummus
2 tbsp ready- made Guacamole
4 tbsp fat free cheese
4 whole wheat Tortillas
1 cup sliced onions
10 garlic cloves
1 cup chopped spinach & cilantro mixed together
2 tomatoes finely chopped
1/2 cup tomato sauce
1/2 cup chilly garlic tomato sauce
Make masala paste using 1 tomato, 2 garlic cloves, 1/2 inch ginger, 5 green chillies, small bunch of cilantro
4 tbsp bread crumbs (I used 1 whole wheat Pita bread crumbs as the regular bread was not available)
3 tbsp of all purpose flour
Salt & Pepper for seasoning

Tomato salsa
Black bean falafel

Flavored brown rice:
Cook 1 cup brown rice in the usual manner. In a pan, add 1 tsp oil, add some minced garlic. Cook it. Now add the spinach & cilantro & cook well. Mix brown rice in this along with some salt & pepper for seasoning. The rice is ready.

Tomato salsa:
In pan, put 1 tsp oil, add some minced garlic & cook till it turns golden brown. Now add the chopped tomatoes & cook till they become pulpy. Now add the tomato sauce & the chilly garlic flavored tomato sauce which is readily available in the market. Mix & cook well. Add salt & let it rest.

Black Bean Falafel:
Lightly mash the boiled black beans in a pan. Add the masala paste, salt, bread crumbs, all purpose flour & mix well. Please note, this will be in a thick batter consistency. Heat olive oil in a pan & make small sized balls of this mixture, deep fry & keep it aside after draining the excess oil.

Assembling the dish together:
Warm the tortillas in microwave for 20 seconds. Spread the humus evenly on it. Now spread the salsa across the tortilla. Add the flavored rice, falafel, guacamole, cheese & onions in the center. Now wrap it into a roll & serve.


After making these, I thought of an alternative for next time. Instead of deep frying the falafel which makes it unhealthy, you can boil the black beans & cook it lightly without mashing them along with the masala paste & seasonings. Add these black beans in your tortillas along with the other things mentioned in the recipe above & enjoy your Black bean soft tacos or falafel. :)
