Palak Khichdi


Palak Khichdi



Ingredients:
1 bunch of spinach
1 cup basmati rice
1 cup yellow moong dal
1 large potato cut in cubes
1 large onion finely chopped
2 tomatoes, chopped
Garam Masala - Cinamon stick, bay leaf and cloves
2 tbsp ginger garlic paste
4-5 cloves of garlic, minced
Seasonings like cumin seeds, turmeric powder and hing
5-6 green chillies
Ghee, Salt and Cilantro

Method:
Soak rice and moong dal together for 45 minutes. Make spinach puree with very little water and keep aside. In a pan, add ghee. temper cumin seeds. Fry all the garam masala. Then add the ginger garlic paste, garlic and green chillies. Fry them for a minute till they turn brown. Now add the onions and cook it till they become translucent. Add the tomatoes and little salt. Cook till they turn pulpy. Now add the potatoes. Cook them till they become soft. Now add the spinach puree. Mix well and cook it for 3-4 minutes. Add turmeric powder, hing and salt. Drain the soaked rice and moong dal and add it to the pan. Mix well. Add double the quantity of water to the rice and moong dal quantity. Transfer this into a rice cooker and cook the khichdi. Once done, check the salt, add some ghee and mix well. Serve it hot with curd or papad.
