Sesame flavored beetroot & edamame parathas

I have read many recipes where lot of different ingredients are mixed together to make varieties of parathas. So I wanted to make my own variation. I decided to combine beetroots and edamame and see how it works. Luckily the combination worked well together and our hunger pangs were satisfied.
For people who don't know what is edamame, it is young soybeans. They are green in color, soft and edible. Usually used in Japanese cooking. It very nutritious as well. 1 cup of cooked edamame contains 17gms of protein while only 8gms of fat. So for vegetarians, this is a very good option to include some healthy food in their diet.



You need:
1 cup edamame, boiled in microwave with little salt
2 beetroots boiled and grated
4 baby carrots, grated
1 cup chopped spinach
1 large onion
5 cloves of garlic, half inch ginger and 3-4 green chillies
1 bunch chopped cilantro
1 cup oats flour (ground regular oats to a fine powder)
1/4 cup sesame seeds
Spices like chilly powder, turmeric powder, dhania jeera powder and salt
3 cups wheat flour
Milk as required to make a dough
Little ghee

Method:
Coarsely grind edamame, onions, ginger, garlic and green chillies to a paste.
In a mixing bowl, add all the ingredients including the paste. Add little milk and make the dough. Divide the dough into medium sized balls and make parathas. Apply ghee on both sides. Serve them hot with dahi or pickle.
