Supremely spicy Mushroom toast

I was craving to have something very spicy for my breakfast. I had some leftover mushrooms I had got for making pasta,  which I made yesterday. Mushrooms are my favorite because of their unique taste, the flavor it gives to any dish and also that it is very easy to cook. Plus it also has its own health benefits. So I decided to make mushroom toast.



You need:
1 cup of finely chopped mushrooms
1 tomato finely chopped
1 onion finely chopped
Half cup spinach, finely chopped
4 cloves of garlic, minced
2 green chillies, finely chopped
1 tsp red chilly flakes
Salt and pepper to taste
Fat free cheese
Cilantro
2 whole wheat bread slices

Method:
In a pan, add 1 tbsp olive oil, add garlic and green chillies when the oil is hot enough. Let it cook for a minute or two. Now add the onions and cook till they become translucent. Add the tomatoes, salt and chilly flakes. Mix and cook till the tomatoes turn pulpy. Now add the mushrooms and spinach. Saute till its cooked, which shouldn't take long. Sprinkle chopped cilantro for garnish. This is how it will look..


Now take 2 wheat bread slices, sprinkle some fat free cheese on both slices. Spread the mushroom mixture on one slice. Sprinkle little pepper powder on top. Cover t with the other slice and grill it for a perfect supremely spicy mushroom toast!
