Burrito Bowl with a Desi twist!
Me and my husband occasionally enjoy a meal at Chipotle. However it never occurred to me to try their dish at home. While doing our grocery shopping last week, when I noticed these kidney beans. So i decided to get them but was in no mood to make the regular rajma chawal. That is when my husband suggested to make Burrito bowls. Thanks to him, that is what I made and was not disappointed at all. :)
Ingredients:
1 cup boiled brown rice
100 gms boiled rajma/red beans
Half a bunch of coriander
1 bowl of chopped onion and tomato
3-4 Tbsp of tomato sauce
2 green chillies finely chopped
3 garlic cloves minced
2-3 Tbsp of Chipotle sauce
Fat free sour cream
Guacamole (can be made at home or get ready made)
Seasonings like turmeric powder, cumin seeds, chilly powder, pepper powder and salt
Olive oil
Method:
In a pan, add 1tbsp olive oil, temper cumin seeds. Add and fry garlic and green chillies. Now add the cooked rice and cilantro. Add salt and mix well. Saute it for few minutes and turn off the gas. In another pan, add 1 tbsp olive oil, add chipotle sauce, tomato sauce, chilly powder and salt. Let it boil. Now add the cooked beans. Mix well and keep aside.
Assembly:
In a serving bowl, add some rice, then add the rajma, sprinkle chopped onion & tomatoes, add a dollop of sour cream and guacamole. Your Burrito bowl is ready to be eaten!
