Healthy Hara Bhara Pulav

This is my version of the famous spinach rice. As you are aware, I always try to make healthy yet tasty recipes rather than the boring diet food. This time I again chose Edamame as one of my main ingredient. It is surely starting to make a weekly appearance in my menu! Well, we are not complaining as it is very nutritious and tasty. Hence I decided to mix spinach and edamame to make my Hara Bhara Pulav using brown rice of course.

In my quest to find healthier recipes to take us through the week, I came up with this idea to mix edamame and spinach to make parathas. I usually use these beans in pasta. I have used them in paratha once when I had combined them with Beetroot. They turned out very well. So today I decided to go green. :) I decided to make spinach and edamame parathas. My husband would never eat it if he knew what was inside beforehand. He is not a big fan of Edamame. So I let him have a bite, got his reaction and then revealed the true ingredients to him. He was pleasantly surprised to know the contents and was asking for more! I got my verdict right there. Go ahead and try these yummy parathas at home and let me know how they turn out!

Me and my husband occasionally enjoy a meal at Chipotle. However it never occurred to me to try their dish at home. While doing our grocery shopping last week, when I noticed these kidney beans. So i decided to get them but was in no mood to make the regular rajma chawal. That is when my husband suggested to make Burrito bowls. Thanks to him, that is what I made and was not disappointed at all. :)

I had intended to make bhurji bread for my husband the other day. However I just had 2 eggs at home. Now that is not enough to feed a man! So I raided my fridge to see what else I can add to this bhurji. There was little cabbage, carrots, spinach, tomatoes and cucumber. OK, tomatoes and spinach I could use..but I guess nothing else. Hidden below the cabbage was a small leftover packet of sprouts. My mind started running overtime. I thought to mix eggs and sprouts in a bhurji. When I excitedly told my husband about my plan, he smirked at me and said, "Sure, after all I am your guinea pig, bring it on baby!" Aha! That gave me confidence to try this combination out. Thankfully it was a super success. We both loved the final product and I secretly enjoyed 1 bread with this as it was only meant for him. I couldn't resist. :) So from now on, bhurji in our household will be made like this for sure! I highly recommend this combo. After all it is all about Taste bhi..aur Health bhi.. :)

I love Pasta! It comes in different shapes and sizes, most veggies go with it and you get healthy versions of it too. So at-least one is not guilty of enjoying it. I usually include this in my diet once a fortnight. I add many veggies to it like broccoli, green peas, shallots, baby corn, capsicum and so on. The recipe I am sharing with you today is a salad using Edamame and Mushrooms. Edamame is not only very rich in protein but it also tastes very good. You can add them in any rice dish or a paratha dough. They blend well. Now coming back to this recipe, it is very easy to make and is ready in a jiffy. After all this dish doesn't involve much chopping.. :)

Since it was World Sibling day yesterday, I decided to dedicate this dish to my younger brother whose favorite dish of all times is Masala Dosa! I am missing him as he is miles away from me right now. So I decided to make his all time favorite dish on this special day. He did get to see it in picture for now and the next time I see him, I will surely make it for him. :)

I am sure you all relate to the feeling of coming back home from a lovely vacation and then not wanting to enter the kitchen at all to cook. Well, I was going through this emotion yesterday. Just got back from Key West and we were exhausted. We didn't do the groceries on our way back either. So I was left with very few options to cook a meal. So finally overcoming my laziness to cook, I entered the kitchen to figure out what to cook. Luckily there was still some cilantro and frozen peas in the fridge. So I decided to use these as my main ingredients. Thankfully, the meal turned out good and tasty.

During my childhood days, I always looked up to one person apart from my parents. She was some years older to me but was my role model in every sense. She was a great cook too. I have grown up eating at their house practically every day as we were neighbors, thankfully!  On special occasions, she would make this soya pulav which we would enjoy till our hearts are full. Over the years I have tried repeating this dish but it never turned out the same. Somehow it never occurred to me to check with her how she made it. Thanks to the development of social media, I am able to be in touch with all my long lost friends. So when I got this craving to eat Soya Pulav today, I pinged her and viola, I had the recipe with all the secret ingredients and procedure. Though I did tell her that I do not expect it to turn out the way she makes it. But her words really motivated me. She said, "You will make the best Soya Pulav, I am sure!" So here I am with my version of Soya Pulav and this is dedicated to my mentor Uma. Thanks for this recipe. Love you. :)
