Sesame & Peanut flavored Capsicum Aloo
Capsicum Aloo is a tried and tested combination. So this time, I wanted to try some variation with this dish. It is just amazing how by just adding 1 or 2 ingredient, you can change the taste of a dish! Both, me and my husband totally loved this new twist. He even told me to only make Capsicum Aloo this way going forward. :) Happy husband..happy wife!!
Ingredients:
2 capsicums finely chopped
3 potatoes cut in cubes
1 large onion, finely chopped
2 tomatoes finely chopped
a small bowl of minced garlic, ginger and green chillies
2 tbsp sesame seeds
2 tbsp peanut powder
Seasonings like cumin seeds, mustard seeds, chilly powder, dhania jeera powder, haldi, maggi special masala
Cilantro for garnish
Salt and Oil
Method:
In a pan, add 1 tbsp oil, sesame seeds and potatoes. Saute them till the potatoes are cooked. Keep them aside. In another pan, add 1 tbsp oil, temper the cumin and mustard seeds. Add the minced mixture and onions. Saute for few minutes. Add tomatoes and little salt. Cook till they become pulpy. Add all the seasonings and peanut powder. Mix well and fry for a minute. Now add the capsicum. Saute till they are partially cooked. Add the potatoes, mix well and cover it with a lid. Check salt as well. Let it cook for 3-4 minutes. Sprinkle cilantro, peanut powder and some sesame on top before serving. Enjoy this with hot rotis or dal & rice.
