Potato Capsicum Grill Sandwich
I was missing home terribly and wanted to eat something which will give me the same feeling of comfort like home. So I decided to make my dad's favorite dish - Grill Sandwich. During my college days, he would always ask me to get a parcel of his favorite sandwich from outside my college. He would really look forward to eat it. This memory made me smile and hence I had to make it today..for him!
Ingredients
2 boiled potatoes
1 large onion finely chopped
2 capsicums finely chopped
1 cup boiled corn
2 Tbsp flax seed powder
2-3 green chillies, finely chopped
1 tbsp ginger garlic paste
2 tsp chilly powder
1 tsp dhania jeera powder
1 cup chopped cilantro
Half cup regular oats (can put oats powder as well)
Green chutney - Will share the recipe below
2 cheese slice
6 whole wheat bread slices
Amul cheese spread
Method
In a mixing bowl, add all the ingredients and smash them together. We will be making a double layer sandwich this time. Take 2 bread slices, spread the cheese spread and green chutney over each slice. Take another bread slice and smear green chutney on both the sides. Make a Patti of the aloo mixture and place it on the bread which has the cheese spread, Place the bread with chutney on both sides over it. Again make a Patti of the aloo mixture and place it on top. Place a cheese slice over it Close the sandwich with the last bread slice left which has cheese spread on it. Cook them in a grill. Eat them hot.
Recipe for green chutney
1 bunch cilantro
1 bunch mint leaves
2-3 green chillies, finely chopped
Half inch ginger
Handful of almonds
1 tbsp flax seed powder
1 tbsp cumin seeds
2 tbsp roasted chana dal/daliya
Lime juice
Salt
Method
Grind them all together in a smooth paste. Adjust salt accordingly. Your minty green chutney is ready to be served along with any appetizer.
