Edamame & Mushroom Pasta Salad

I love Pasta! It comes in different shapes and sizes, most veggies go with it and you get healthy versions of it too. So at-least one is not guilty of enjoying it. I usually include this in my diet once a fortnight. I add many veggies to it like broccoli, green peas, shallots, baby corn, capsicum and so on. The recipe I am sharing with you today is a salad using Edamame and Mushrooms. Edamame is not only very rich in protein but it also tastes very good. You can add them in any rice dish or a paratha dough. They blend well. Now coming back to this recipe, it is very easy to make and is ready in a jiffy. After all this dish doesn't involve much chopping.. :)



Ingredients:
100 gms whole grain pasta cooked as per instructions on the box
Handful of cherry tomatoes, sliced in half
1 cup mushrooms
1 cup boiled edamame
Half cup spinach
4-5 cloves of garlic
Seasonings like cumin seeds, chilly flakes, pepper powder, garlic powder, oregano and salt
Fat free cheese to sprinkle on top
1 tbsp Olive oil

Method:
In a pan, add olive oil, temper cumin seeds, add garlic and fry it for few minutes till it turns light brown, now add the tomatoes and saute for few minutes. Mushrooms and edamame can be added now.Tear some spinach leaves in it too. Mix well. Add salt, garlic powder, pepper powder and chilly flakes as required. Cook the veggies for few minutes.


Now add the boiled pasta, oregano and fat free cheese to this. Mix well. Cook it for 3-4 minutes and your pasta salad is ready. Enjoy this with a soup or some bread sticks.
